    Homemade Mayonnaise, page 24. I've made mayonnaise for years, but this has proven to be the best I have ever made. Some adaptations for modern ingredients. I use 2/3 avocado oil and 1/3 olive oil for health reasons, but the mayo is light, flavorful and lemony. My new basic.
