    This book is a compendium which includes two of Bert Greenes books: Greene on Greens and also Bert Greenes The Grains Cookbook. I didn't realize this and purchased all three so leaving this note here so others don't make the same mistake.

    I located the recipe for "Over Easy Green Chile Enchiladas" on EYB, however, the recipe appears in "The Grains Cookbook", also by Bert Green (page 111), which I have on my shelf. I thought I had "Greene on Greens & Grains" in my collection, however, I had lent it out and it was never returned, so I'm assuming the recipe is also in this book.

      Made with canned artichoke hearts and roasted a few slices of eggplant to use in place of the ham. Delicious!

  • Broccoli Valencienne

      Not a lot of flavor to this. I ended up adding more mustard and fresh tarragon and some orange juice from the zested orange to sweeten it up a little but it still wasn’t worth repeating.

  • Smothered cabbage (Venetian verze sofegà)

      Excellent side dish, made with flat cabbage; it was still a bit crunchy after an hour of cooking, maybe standard cabbage would get much softer.

  • Mediterranean stewed okra with tomatoes

      Cook longer for larger okra. Used 2 cans diced tomato in sauce. Added some oregano along with basil. Added sliced sautéed Portuguese chorizo at the end. Would repeat! Served with yellow rice (white would also be good). Could add a little Trappy’s hot sauce next time.

  • Mushroom-stuffed tomatoes

      Nice flavor and pretty, but filling is more liquid (not watery but lava like) than I expected, even after having thoroughly cooked the mushrooms.

  • Hominy and bangers

      Quite good, but I added 1/4 cup of chicken broth, because the fennel was still almost raw after the first 10 minutes of cooking.

  • Tuna flummery

      Good casserole with mild flavors; family loved it. Used canned tuna in olive oil.
