      An excellent lemon curd. The 6 yolks it requires was exactly how many I had left over from making meringues. I canned the results according to the instructions in “Food In Jars”.

  • Chilled lemon soufflé

      Rich lemony goodness. Well worth the effort and the number of bowls dirtied. You have to use a hand mixer for this as the egg base is whipped for 15 minutes over simmering water, then gelatin is added and you whip it some more until the mixture comes to room temperature, you then need to whip the egg whites in another bowl and the heavy cream in yet another bowl before folding everything together. Then you wrap a collar around your souffle dish and pour the mixture in to achieve the souffle look.

      Wow! If you love lemon this is the ice cream for you. It is exceptionally creamy and lemony and reminds me of the lemon custard ice cream that we used to get at Baskins Robbins years ago. But I think this version is probably better than theirs.

  • Mile-high lemon angel food cake with lemon glaze

      After making the Lemon Custard Ice Cream from this cookbook I had lots of egg whites leftover and decided to try this angel food cake and I am very glad that I did. The lemon oil in the cake gives it a nice subtle lemon flavor and the lemon glaze gives it a real lemon punch. Paired with the Lemon Custard Ice Cream it is a lemon lover's dream dessert.

      With lemon oil, zest and juice this cookie is a lemon lover's dream. They are also very crispy and light, perfect with a glass of ice tea on a warm summer afternoon.

      They spread and never settled into an even texture. They are nothing like the sugar cookies my grandmother made. Not worth 6 lemons worth of zest.

      Lovely, sandy texture. Not at all sweet. Do not skip the step of putting the sugar and lemon zest through the food processor. No matter how fine the zest is grated, it will leave threads in in finished cookies.

      The crumb is a lot like a box cake. I cut back on lemon extract because I feared the amount called for would give an unnatural note. I’m glad I did so. The almond paste adds moisture rather than flavor.
