Notes about Recipes in this book

  • Garlic-stuffed grilled mussels

    • joneshayley on January 21, 2019

I’ve made these numerous times and they always go down so well! Everyone I have served it too has raved about them. Perfect party fish dish, easy to make ahead and impressive.

  • Salmon tranche with fresh lime and ginger sauce

    • Ro_ on June 02, 2021

I only marinated it for an hour but it was plenty given the delicate fish and strong flavours. The glaze didn't work at all, much too overpowering so I left it off. Overall this was fine (without the glaze) but not a recipe I'll repeat.

  • Pan-fried pheasant with a mango sauce

    • Ro_ on November 24, 2022

I had boneless chicken thighs to use up, and was looking for something to do with them that included a sauce...found this recipe, so used it! YMMV whether I therefore actually made the recipe or not, given that it's for pheasant breasts. Whatever, the sauce was delicious - really simple and quick to do, lots of flavour, I'd definitely make this again and I think it could work with any poultry, maybe even pork too.

  • Lemon and thyme chicken with winter-roasted vegetables

    • adewar on February 15, 2016

Roasting so many different kinds of vegetables together, all with different rates of browning, then adding chicken breasts and trying to ensure they were cooked through, was a bit of a nightmare. The cooking time stated was too long. On the other hand, I was glad I made this because roasted swede was quite a pleasant revelation.

  • Grainy mustard and herb potato salad

    • Ro_ on August 18, 2020

I think this might be the best potato salad recipe I've tried yet. I like that it incorporated both a vinaigrette and a mayo dressing, getting the best of both worlds. The only thing I'd say is to possibly omit the parsley if you're making it in advance, since it doesn't hold up that well aesthetically the next day/day after.

  • Red cabbage with lemony coleslaw dressing

    • Ro_ on June 16, 2021

I omitted a lot of stuff (celery, sultanas and walnuts) but loved the result! A really fresh, creamy, well balanced coleslaw which I will make again.

  • Hot Cajun-spiced potato wedges

    • Ro_ on October 31, 2020

A nice marinade for wedges, but I find they need a little more oil than stated in order to crisp up properly. I also added just a pinch of chilli powder rather than the full amount in the recipe, since mine is very potent, and sure enough they packed a spicy punch even with just a little bit.

  • Herbed fondant potatoes

    • Ro_ on July 13, 2021

Delicious and so simple! Great texture, buttery and soft. Prefer this to eg dauphinoise that I've tried to make myself and comes out too liquidy. Only criticism is quantities: recipe is supposed to be for 6, I made a half quantity and got two fairly small portions.

  • Herb falafels

    • Ro_ on November 25, 2019

These didn't work at all: totally fell apart during shallow frying. Tried to bake them in oven as a last resort but they were still going to mush as soon as I touched them. Now I didn't measure the olive oil I just added by eye so it's possible I used a bit more than the 3tbsp directed, leading to the issues I had, but even so I won't be trying these again.

  • Pistou pasta with rocket

    • Ro_ on October 17, 2020

I had rocket and mushrooms to use up, and everything else was stuff I always have to hand, so this recipe fit the bill perfectly. It turned out well, but it's nothing amazingly special - I was a little disappointed that the pistou is only a small quantity so ends up getting a bit lost. Also the wine comes through quite strongly, I'm not totally sold on the method of cooking the shallots and mushrooms from raw in the wine.

  • Piquant chicken with basil

    • Ro_ on October 14, 2020

From the recipe title I thought this would be spicy, but in fact it's more just flavourful. The unusual ingredients in the tomato sauce (soy sauce, muscovado sugar, ketchup, mustard) all give it quite a sweet and tangy flavour which I enjoyed. I think I'd make the sauce again for pasta or meatballs, but not necessarily bother with the chicken breasts.

  • Aromatic Thai rice

    • Ro_ on June 09, 2021

Delicious, subtle yet flavourful rice recipe which I will repeat.

  • Quite the best summer pudding

    • Lovestocook on July 20, 2019

Couldn't get currants, subbed extra blueberries & raspberries. Went down very well!!

  • Herb and Parmesan soft rolls

    • Ro_ on July 15, 2021

Lovely flavours here. Sadly I overproved slightly during the second proving and they ended up a little flat. However, I'll make these again. Would be lovely with soup.

  • Chilled gazpacho chicken

    • Ro_ on July 08, 2020

I think I probably used less cooked chicken than the recipe's quantity (I didn't weigh it out) and so with the fully quantity of mayo/creme fraiche mine came out a lot more sauc-y than the picture. But the taste was delicious, I'd make this again. I think it would be good served on a bed of crispy lettuce eg romaine or little gem.

  • Double chocolate chip brownie cake

    • Ro_ on April 11, 2020

A nice, if not totally exceptional, chocolate cake. I didn't have enough white chocolate left for decorating the top, so just used icing sugar. I noticed that the white chocolate in the cake sank to the bottom, so would coat in flour before adding next time. 45 mins in the oven was enough cooking time, it didn't need the full hour.

  • Banoffee traybake

    • Ro_ on June 09, 2021

I stupidly forgot to put the eggs in. The result actually held together OK-ish (but cutting into squares was very fraught) but was dry. The taste was good, but I had thought my partner would love this flavour combo and he was actually unfussed, so I may not repeat.

  • Tiny new potatoes with dill herrings

    • Ro_ on July 15, 2021

Unusual and delicious. I used smoked herrings cut up into small pieces as couldn't get the dill marinated ones. Really nice, and I love that they can all be made in advance.
