Notes about this book

  • scparks on April 14, 2012

I bought this book with the intention of baking through the book and finding two or three breads to make regularly. The first recipe, Focaccia, was sooooo successful that I just stopped there. It is easy, tastes great and has many variations. That one recipe is worth the price of the book.

  • Rosemary-pepper bread sticks

I have a lot of rosemary from the garden, so I thought I would try these. I'm used to high hydration doughs, but this was just too wet so I had to increase flour...added at least 1/2 cup, and dough was still wet. I reduced pepper a lot too and I'm glad I did. For anyone wanting to try this, it's really too wet for food processor, I would mix in my bread machine if I repeated these. Final taste was quite good, but I prefer other bread sticks I make so these won't be a repeat for me.

Publishers Text

Acclaimed professional baker Suzanne Dunaway reveals her truly revolutionary technique for baking unforgettable breads that require no fuss and no special equipment. The crusts are lighter, chewier, and the crumb is moist, stays fresh longer, and has more intense flavour than most breads. Her ingredients are simply flour, water, yeast and salt - and, passion. She uses no preservatives or additives of any kind. The recipes are her own creations, developed over years of trial and error. You will find focaccia, ciabatta, pane rustico and pizza as well as breads from around the world such as baguette, sourdough flapjacks, blini, muffins, corn bread, brioche, African Spiced bread, kulich and kolaches. In addition many of the basic bread doughs are fat-free, sugar-free and dairy-free making then perfect for people on strict dietary or allergy regimes. There are also dozens of recipes for dishes you can make with bread - souffles, soups, salads and even desserts such as chocolate bread pudding. Plus fun recipes to make with children.
