    This book surprised me. On delivery I was disappointed; I could find little that I was interested in cooking and thought it would sit unused for a couple fo years until I did another Great Cookbook Purge. But over and over again when I have entered ingredients on hand into Eat Your Books it is a recipe from this book that catches my eye. Having now made perhaps a dozen, they have all provided great pleasure in the eating.

  • Chicken & peanut rice (Mpunga wosakaniza ndi nsinjiro)

      Rather nice. Used an orange bell pepper instead of green; used a whole jalapeno pepper (seeded and minced); used jasmine rice. Rice-to-liquid ratio in the recipe produced a fluffy pilaf, though I did let the dish steam about 15 minutes instead of 10 at the end (after simmering for about 12 minutes). Since I had no fresh cilantro, I used a mix of flat-leaf parsley and basil. And something about the dish made me think it would go well with fresh cucumbers, so I garnished my dish with a peeled, seeded, and diced cucumber from the garden.

      The quantities given result in a pastry a bit too sweet for my tastes (although exactly what you'd expect from a baklava). Personally, I find adding just a little sugar to the nut paste and removing it from the honey syrup result in a much more palatable sweet.

      This was not the sort of luscious fat bomb one wants from an artichoke dip. It tasted healthy. Bleh.

      Once again Allegra comes up trumps. This is a highly flavoured, easy, fish pie with salt cod as the star. Served with wilted greens, delicious and it reheats well.
