      This is a variation on a cake I make regularly for my dad. He just loves it. I usually make this cake with green apples and raisins, but decided to try it with cranberries and it was great. You haven't lived until you have tried a slice of this smeared with butter. Jac (Tinned Tomatoes) x

      We eat this pasta dish a lot at home. It is great with homemade pesto, but still super tasty made with jarred pesto, so it is a great standby dish. If you are making this with jarred pesto, you don't need the garlic, basil or pine nuts the recipe calls for. Those ingredients are basically for making a pesto first. Jac (Tinned Tomatoes) x

  • Sweet potato, spinach & chickpea bake

      This bake is absolutely amazing. It taste's so, so good. Serve it with potato wedges and salad, on wraps with salad leaves and sour cream or for an extra treat layer it with cheese sauce and top with grated mozzarella, then bake in the oven until golden. (Jac - Tinned Tomatoes) :)

      This is a great winter dish. You can make your own gnocchi or just use store bought gnocchi. I fried my gnocchi first before adding it to the sauce. An idea I got from Nigella Lawson. Delicious! Jac (Tinned Tomatoes) x

  • Fig, beetroot & feta salad

      This is my favourite salad at the moment and it is so quick and easy to throw together before work in the morning. The mangetout (sugar snap peas) just need to be popped in the microwave, in a small bowl with a splash of water and covered with clingfilm, for 1 minute. I use pickled beets for extra zing and a honey & mustard dressing, but again that is up to you. I hope you give it a try. Jac - Tinned Tomatoes) :)

      This is a Jamie Oliver recipe. Jamie serves this curry with chicken skewers, but as a veggie dish alone, I think it needs some extra vegetables added to it or maybe some quorn, if you like it quorn that is. Jac Tinned Tomatoes :)

      I found I had to double up the recipe for the custard layer as it was quite thin. The recipe on my blog is the original recipe, so double up the ingredients. I would also recommend adding more custard powder and less icing sugar to improve the custard flavour. Jac (Tinned Tomatoes) x

      Reduced the butter from 80 to 50 grams because I balked at the amount of fat. Needed 3/4 cup milk for a good texture. (She lists 1 cup but in the instructions it seems like she expects you to use your judgement.) I reduced the cheese to 100 grams. Next time I will use the full amount and maybe more because it turned out it was the cheese that made this special and not just mashed potatoes. Next time I may do like I have seen in some other recipes and add cheese mixed into the potatoes as well. Love all the chives! She didnt say what size pan to use. I found a 9x11 worked well.

      Sherbet in the UK, is a sweet powder to dip a lolly or your finger in. A great childhood memories of sweet fizziness on the tongue.

  • Tomato gnocchi bake with cheesy oat crumble

      This was fairly disastrous. Crumble took much longer to cook than stated and didn't add much. I still like the idea of a gnocchi bake and sautéing gnocchi was a revelation but won't be repeating as a crumble.

Tinned Tomatoes is in essence a vegetarian food blog, but there are hundreds of easy and delicious recipes for everyone to enjoy. From soups and salads to pasta dishes and curries with lots of scrumptious cakes and desserts thrown in for good measure.

Jacqueline also hosts a monthly soup and salad challenge No Croutons Required. For this challenge food bloggers from around the world experiment and submit their recipes for the monthly round-up. It has been running for 4 years now and has become a very popular event.
