  • Vegetarian enchiladas

      There are various errors in the book. I thought they were confined to the index where some page numbers are wrong but this recipe is for quesadillas not enchiladas at all — plus I can't get my head around why this "vegetarian" dish is in the Meat section.

      I won't rate this since I made numerous changes, but the end result was delicious. I made 1/2 recipe, but with 1 lb lamb (to use the package), draining the fat after browning. Used crushed tomatoes instead of diced, and tomato paste thinned with water instead of puree. Added some dried mint, oregano, allspice, and cinnamon to the sauce. Roasted the eggplant in the oven instead of blanching and frying. Used half the butter in the topping and supplemented the creme fraiche (had some but not enough) with heavy cream and more milk; used a whole egg.

  • Multi-grain loaf

      A good, healthy sandwich bread. Rolled oats worked in place of wheat flakes. The second rise took longer than the stated 20-30 min.

  • Potato bread

      I wasn't sure if the mashed potatoes were meant to be leftovers (with milk, butter, s+p), but that's what I used and the bread turned out well. As Mary notes, the loaves are small; next time I'd make one large loaf from 3/4 recipe. The crumb was slightly open, texture somewhat spongy but firm enough to slice neatly - great toasted for breakfast sandwiches.

      These were excellent - tender, lightly sweetened and spiced, loaded with currants. I was able to cook all of them on my griddle at once, but they were fairly close together, which made turning them rather tricky.

      This recipe for scones DOES NOT WORK! All the ingredient measurements are off. Use Mary Berry's scone recipe from the BBC website instead.
