      Substituted pecans for walnuts. Also used zest and juice from two lemons instead of the orange. Very good. I did not let it sit for 24 hours as the recipe recommends.

      Hmmm...I gave this 4 stars back in 1994, with the suggestion to either use less onion, or perhaps dice them instead. Think I may have to revisit (?) this before rating it for EYB!

  • Sweet potato soufflé

      Loved this when I made it in the 90's, and still do. Nice and light with a hint of orange, and the marshmallows give a nice touch of sweet. Recommend!

      This recipe has earned a spot in my favorites file. It is delicious, easy, and quick. Just add some Hoppin John and cornbread, and you have a soulful meal!

      When I made this many years ago, I noted that I "can find a better recipe". This recipe doesn't have any sugar, uses milk instead of buttermilk, and has no melted butter in the batter--three ways in which it is different from my favorite (so far) cornbread recipe (from Deborah Madison's Vegetarian Cooking for Everyone).
