Rice with okra and herring (Diri kole ak kalalou ak aranso/Riz a l'hareng et calalou) (pg 85) I made the variant using salt cod - a very flavorful, one dish meal. A good way to introduce okra and salt cod with none of the negatives some associate with them.

Publishers Text

With African, French, Arabic, and Amerindian influences, the food and culture of Haiti are fascinating subjects to explore.

From the days of slavery to present times, traditional Haitian cuisine has relied upon staples like root vegetables, pork, fish, and flavor enhancers such as Pikliz (Hot Pepper Vinegar) and Zepis (Ground Spices). This cookbook presents over 100 recipes like Diri ak djondjon (Rice with Black Mushrooms) and Lambi (conch Meat). Also included are traditional holiday foods and the author;s favorite drinks and deserts.
