      Made this for Easter brunch--not traditional, I know, but it helped use up corned beef from St. Patty's Day that was taking up space in the freezer. It is my first time making this dish, and it turned out just fine. I would add another onion, though. I served it with boiled asparagus with a lemon vinaigrette.

      It is worth cooking corned beef just for this, and it is a superb way to use up leftovers. A firm favourite for simplicity and taste.
