    Very good. The chickens I roast are too young and too tight-skinned to do the familiar stuffing-under-the-skin method, but it worked perfectly to fill the cavity with most of the stuffing and then, around 15 minutes before the chicken was done, pat the rest on the outside. Not the most beautiful roast chicken you've ever seen, but one of the tastiest.
