    I made the mistake of ignoring the instructions for cutting the fat into the flour here and instead did what I do with my "usual" pie dough (in food processor, thoroughly process ~1/2 fat with dry ingredients, then pulse in remaining fat until pea-size). This resulted in a pie dough so tender that it couldn't be lifted in one piece into the pie plate. Ooops. I ended up patching the various pieces together in the plate. Fortunately all worked out OK in the end - the custard pie I used it for didn't leak and the crust both held together when sliced and was very tender.
