    This is a lovely nutritious soup. I did a search based on the vegetables I had and this one came up and I'm glad I tried it. I didn't peel the squash as it was homegrown, and also used my own kale, garlic, etc from the veg garden. I also added about a cup of the cherry tomato sauce from Ottolenghi simple. I omitted the corn as I didn't have any, but I'm sure it would be nice. I will be repeating this. This soup keeps well in the fridge but the quinoa keeps absorbing liquid so it's good to have some extra stock on hand when reheating. Update: I have now made this soup several times, and I've chosen to cook the grains separately to add just before serving.
