    Super easy, fast weeknight dinner for busy summer nights (double hitter baseball games). Best when peaches are in season, but also works with frozen. Only a few ingredients, but the taste is perfect with the sweet of the peaches and the peppery mix of arugula. Cold leftovers delicious on salad the next day.
