    This was good and disappointing at the same time. If your expecting bread or pound cake, this is not that recipe. If you want something super-healthy in a loaf form chock full of delicious toasted nuts, this is that recipe. My favorite part was that it stuck together in a firm loaf very well. However, I could not get passed the slimy feel when eating it. Not sure if I can attribute this to the oats, chia, and/or psylium husk. No matter how much I toasted it afterwards, it had an unpleasant texture. If you can get passed that, it would be great for an "oatmeal-to-go" type fare and probably really fun to come up with your own concoction.

    This is the variation Rande uses. She was over last night and helped me put it together. So glad to finally have a loaf in my house, will go into my regular rotation.

    This is truly outstanding and incredibly easy to make. Mixed everything together in my loaf pan the night before and baked it in the morning, just in time for lunch sandwiches. Made the almond substitution.
