    Good simple chicken recipe for the Instant Pot. I made it with four leg quarters, leaving the skin on for additional flavor, and the 10 minutes under pressure was plenty of time to cook it thoroughly. The lemon and olive oil marinade is key to more deeply flavoring the chicken, and the final addition of Kalamata olives (which I sautéed in some olive oil and several chopped garlic cloves) was an easy quick way to give the dish a more Provençal look and taste. I reduced the lemony cooking sauce for a few mminutes (highly recommended).
