    NYE 2023. Spectacular results. Used a bone in rib roast 11.34 lbs. Note I slow roasted for 3 hours with the intent of searing later, but by that point it was cooked through past the 110 marker so I only reheated it. Served with all the Lawry's style add ons - everyone loved it.
