Can substitute vegetable oil for ghee, ground cumin for black cumin seeds, and ground coriander for fennel seeds.

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I made this to use a surfeit of greens instead of only spinach. I included arugula and herbs from the garden and even beet greens. This mix added interesting flavors above and beyond the spices. I pureed it to resemble the restaurant dishes I’ve had.
