Chicken mac-and-cheese from The Great Big Pressure Cooker Book: 500 Easy Recipes for Every Machine, Both Stovetop and Electric (page 272) by Bruce Weinstein and Mark Scarbrough

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

I substituted boneless skinless chicken thighs because that's what I had on hand ,regular mustard rather than dijon and milk instead of the half and half. The chicken thighs cooked to perfection and the milk worked just fine. The regular mustard had a strong flavor so I'll make it a point to get dijon for next time. I was skeptical about cooking the pasta and made the mistake of using my 4 qt stovetop pressure cooker. Don't do that, the starch was spewing out of the vent hole and created a mess. If the instructions say use a 6 qt, use a 6 qt. Lesson learned. The pasta was not mushy at all. Overall, minus the starchy mess I had to clean up it was very well received and my husband advised me that it's a keeper. We will make this again in the very near future.
