    5 enthusiastic stars! Everything about this recipe is perfect - the choice of the root veg, the herbs, the lemon to dress the cooked toasted farro, the additional of a small amount of cheese, and the ratio of everything is all perfectly balanced. The leeks feel especially luxurious. Toasting the farro brings out a wonderful nuttiness and a superior texture once it's cooked. Added one sweet potato and used Bulgarian feta for the cheese. Also, for those who keep track, this recipe offers a major nutritional bang for the low-calorie buck. Will definitely make again.
