    Perfectly simple & delicious. I used chicken broth (BTB) instead of veggie broth. Was worried the mint would be overpowering but it wasn't. Doubled the recipe to use a full pound of lentils and have a nice big pot of soup.

    Fully pureed, with ample lemon, this is a copycat of my favorite restaurant red lentil soup.

    Delicious. I used water instead of broth, added some diced tomatoes, and used two grated carrots instead of one diced. Simple and satisfying.
