    I used escarole instead of endive, and it ended up being a bit too loose to work as a toast topping. It was a delicious salad with toast on the side, though! This will go into my lunch rotation.

    These are fantastic. Delicious, light, and flavorful. They were good with the Trader Joe’s canned trout they mentioned, but tonight I made them with some very high quality smoked trout from Sun Valley, Idaho, and they were perfection.
