    My husband and I liked this a lot. The lemon zest and juice give the pasta and two squashes a lighter, refreshing flavor, perfect for warm weather. I was lucky to be able to use fresh mint from my garden. I used my spiralizer to create squash noodles and the result was visually very appealing.

    Not sure I am actually qualified to review this recipe because of all the changes I had to make. I added some garlic (because who doesn‘t like garlic?), had to use basil instead of mint, and did not have any lemons (just back from vacation without a trip to the store before cooking). Nevertheless, this is a very quick pasta to make and we liked the end result! Will probably make again.
