    My Husband and I loved this recipe. It’s really a type of chicken schnitzel but much better because of the way it’s breaded, sautéed, and then sliced. I used Dave’s multigrain power seed bread for the bread crumbs. On my electric stove, my two 8 ounce pounded breasts needed five minutes per side- 10 minutes total on medium heat (pink inside at 6 total minutes). Will repeat. This is a great way to cook chicken breasts without overcooking them. I don’t like arugula so I served the pan fried chicken slices with roasted asparagus and mascarpone Hollandaise sauce.
