    I made this recipe out of thrift, because I was already using the oven to bake a cake at the same temperature, also for 1 hour. I used sweet potatoes, carrots & potatoes. I wish I had checked after 40-45 minutes, because they got a bit too charred. They are still edible in say, a quiche, but are not suitable as a side dish.

    Wow! This is a fantastic roasted vegetable recipe! I skipped the salt. Did a combo of Japanese sweet potatoes, carrots, onion and Brussels sprouts. Put in oven, went on a walk for an hour and done! Okay even without stirring during cooking.
