    Delicious and could not be easier to make. My cauliflower was large, so the sheet pan was fairly full and needed the full 40 min roasting time. I used 1.5 tsp fennel seed (all I had) and 1.5 tsp herbes de Provence.

    Delicious! After reading reviews and comments on the Food52 site, I made changes with good results: I cut the cauliflower into larger than bite-size chunks to prevent burning or overcooking, and I reduced roast time to 30 minutes. I also made my own changes: I used whole wheat penne pasta and reduced the amount to 8 ounces for four people, added 1/2 tablespoon EVOO when tossing everything together before serving, and cut the amount of sausage in half, making this more cauliflower-based. I kept the measurements for the Parmesan and other ingredients the same. 4.5 rating is based on those changes. Although the author describes the dish as a winter pasta, we ate this on a 90 degree day (inside our house with AC) and it was great. I think it is suitable for any time of year.
