    I liked the additions of fresh thyme & sherry vinegar but it did take longer than the time suggested to get really golden & caramelized. They were delicious on our version of her Niman Ranch burgers (ie we made sliders) and I did make extra to stash in the freezer.

    I added some salt after sweating the onions to help draw out moisture. The onions got very soft after 30 min, but didn't brown much; some sugar might help. They were good on the burgers.
