    I scaled this way back to use up 2 good sized, very ripe Roma tomatoes. I thought there was enough oil in my pan but by 25 minutes, the bottom was pretty burnt. It was easy to lift the tomatoes away (no harm done), I added a sprinkle of crumbled feta & these were delicious beside our steak. T's verdict = next time, please make more! I will (for just us or company) & I will also try parchment paper in the pan and check at 20 minutes.

    I used smaller "strawberry" tomatoes. They started burning after 20 minutes, so check often. Good, sweet.
