    I had the brilliant idea to make a sweet potato rosti. Food52 had the idea first, just last month. I reduced the ratio of apple to sweet potato, I probably had twice as much sweet potato as called for and put in one granny smith apple. This was sweet enough without more apple. My husband and I particularly liked the crispy layer from the cast iron pan; he said it was sweet potato candy. I served with sautéed lacinato kale and a runny egg, my go-to for regular potato rosti.
