    A welcome twist on a classic - comfort food with a kick. I used 3 T Mae Ploy red curry paste for 1.3 lbs of ground beef, and this was perfect for me but a little too spicy for my husband. Also used lite coconut milk in spite of the directions not to do so; I had to simmer it for around 20 minutes but had expected to do that so it wasn't a problem (used the whole can). I added 1 cup black eyed peas and next time would add a bit more veg as well, probably red bell pepper and perhaps tomato. I skipped the biscuit part of this recipe. Served in regular buns, was fabulous with the slaw.
