    This shawarma was extremely cumin-forward. While I love cumin and the tons of coriander this also had in it, this was not our preferred flavor profile of shawarma and I have made better. Also I wouldn't attempt this again without a grill. Even though the Food52 recipe said it could be done entirely in the oven, this is a dish that needs a good amount of browning otherwise you can have a rather soggy thick layer of seasoning.
