    This isn't much of a recipe (more of a template)...simply roasting potatoes and poblano peppers and adding to a tortilla with the toppings of your choice. The outcome really depends on the toppings you decide to use. I added cilantro, roasted corn, cotija cheese, lime crema, and some seasoned tomatoes/salsa. They turned out well.
