Can substitute yellow mustard for the book's "Thousand Island-ish dressing", cabbage kimchi for sauerkraut, vegan cheese for vegan mozzarella cheese, tamari for reduced sodium soy sauce, hot sauce for Sriracha sauce, mesquite seasoning or smoked paprika for liquid smoke, and the book's "Vegan sour cream" or "Cashew cream" for vegan mayonnaise.
