    This was delicious, especially with garlic bread. I sprinkled half the parmesan in between the eggplant layers.

    I liked this technique and would make again. My eggplant took longer to brown. Didn't measure the oil, which means I probably used a bit less than the recipe suggests, but it was still good. Added a layer of zucchini as well, which made the dish lighter. Used my own tomato sauce. Delicious, and very easy if not fast.
