    My muffins came out a bit dry but were baked until just lightly browned at the lower time given. Even though a bit dry, these were good. I used the lesser amount of butter option and 2% milk which probably caused the muffins to be less moist. I’m always looking for a tasty and moist corn muffin recipe that doesn’t pack a lot of calories and fat…The search continues.

    Simple, quick and good. This a versatile recipe for weeknight cornbread. I usually have the ingredients on hand.
