    Fantastic flavors, but possibly could use time adjustment. Maybe because I used Egypt's Best instead of Arborio rice for this spanakorizo, it could have used a longer cooking time. The spinach needed a bigger vessel than called for, as well--I used my wok. Greens cooked waaaay down, almost too cooked, but were still difficult to mix in in its roughly-torn form. Maybe next time I'll use sturdier greens, but either way I'll chop them a little smaller. Usually Egypt's Best works fine for Mediterranean pilafs & risottos, but I should have tested more carefully as I went.
