    Great spicing. I only used 3T of the vinegar and EVOO and added 1 1/2 T of Honey to the mix. I made these changes because I roasted the carrots and served them warm. I would like to try them chilled sometime but these came out bold and delicious.

    Comes together quickly, but should be made ahead of time and chilled. Carrots are cooked but retain some bite and aren't overly sweet. Nice blend of spices. Served with lamb merguez sausages.
