    This recipe has good bones. I would likely season the chicken a bit, even with the parm i found it a touch bland, perhaps a brief brining would help. I liked the technique and found the overall balance of flavours quite nice. I will admit that I ended up processing the roasted tomatoes with a bit of pesto because my spouse doesn't like whole tomatoes, but they looked great before I put them in the blender.
