    This was absolutely delicious. The relatively slow cooking followed by the broil yielded lovely juicy thighs with crispy skin without the hassle of first browning the chicken. The combination of chorizo, caper, peppadews, and sherry yields a spicy, tangy, sweet dish that is very well balanced and just delicious. Plus the fact that the chicken is cooking in it's own plus the sausage juices means you get a lovely round mouth feel from the rich pan sauce.
