Notes about this recipe

I quite liked this recipe, but partner less keen. If I made it again I'd probably use more chickpeas and less cauli/butternut.

A good, pretty mild curry. I made the butternut curry only, and changed the veggies quite a bit as well as well as adding some hot sauce. You need a really large skillet to cook the squash, cauliflower, chick peas and sauce, so I would go up a size next time. I liked the sweetness of the squash with the other ingredients. Rogan josh paste is not available here (in Canada) so I had to use sauce. Next time I would try making my own paste; Jamie Oliver's recipe for the paste is available on his website. I will probably repeat this one. Took about an hour.

I agree about the 30 min - not a chance really. But otherwise this recipe is simple, delicious and full of veggies! I usually do this with the carrot salad and some naan. I also do a double batch and freeze it for quick meals later. You can make you own rogan josh curry paste with the recipe from Ministry of Food if you have that book too!

Success! Partner (meateater) liked this veggie curry and was surprised how nice it actually was. Took longer as it was first time. Made all but the pickle and didn't have poppadoms, but naan instead. Will make again as it was easy enough. Prepped veg before and had everything ready to go, so was less stressy and gave myself more time. Don't know if it's a 30 min meal, but it taste so nice and it's so easy, I'm not bothered about time.

Like many recipes in this book, this is not as fast as suggested. Prepping and cooking 2 onions, a butternut squash, a cauliflower, some spinach and coriander is never going to be done in 30 minutes. And I didn't do all the other components of the meal like rice, salad, bread, poppadoms. It was good though, I liked the combination of vegetables and I will make it again.
