    This recipe was a bit underwhelming because the chicken was overdone. The method involves placing a heated weighted pot on top of the chicken to cook it on both sides. I also have the DVD of this episode and was excited to try it. I tried it twice, reducing the cook times the second time, and the results were similar; the chicken turned out hard and a bit leathery! The flavours were good so I will make again, but will use my regular braising technique (brown in pan, add some liquid, lid on, cook on low 25 minutes, finish with aromatics). I liked the sauce and the sesame seeds. I didn't make the entire meal but it probably could be completed in about 45 minutes or so.
