    Good idea for making a quick dauphinois. It would benefit from a longer cooking time nonetheless.

    Several really good tips speed this recipe along. Jamie is a big fan of using the food processor slicing blade to speed the slicing process and now I am too, really great results and much faster than using the mandoline. The one problem I had is with starting the recipe on the stovetop- I could only fit my pan on one burner and as a result I didn't achieve even cooking. This was less of a problem for the potatoes than the onions, some of which retained an unpleasant raw consistency. I completely forgot the anchovies, and the flavor was still good, but I think it would have been improved with the additional umami.

    This was as quick as he says, and delicious. I didn't include the anchovy and it was still very good.
