    I'll be honest, I don't ever expect to do these full meals in the 30 minutes, and that's fine with me. I had lots of time to make this, so adapted it slightly. The satay sauce was delicious - I cut the chicken into chunks and coated it all in the sauce and left it to marinade for an hour or so, before cooking it in the oven. The noodles were really tasty. I hadn't used that technique before, of zizzing flavours up in the mini processor and then mixing it all in with the cooked noodles. I'll be using it again - much easier than chopping and stir frying. I had some left over cooked broccoli which I added to the noodles to add greenery, instead of accompanying with lettuce. It worked well, and I'm now a fan of cooking more broccoli than you need so you can save some!

    Very nice, although I made it less fiery because of the little ones, who polished it off. Dish is very yummy! Will make again.

    I really liked this. I think I will be making this again, but instead of doing the whole meal, I will just grill one chicken breast with my favorite store bought thai peanut sauce and add it to this noodle dish. Maybe throw some peapods or other vegetable in to make a one dish meal. The cashews are phenomenal, don't skimp on them.
