    Our family loves this pimento flavored mac 'n' cheese. Have some hot sauce on hand for those who like it spicy; as is, the recipe has a pleasant hint of heat without being overly spicy. For mozzarella, I used the smoked mozzarella chub from Trader Joe's, which was a good match. You can easily double the recipe or make even more to feed a crowd, or make it in advance and bake when needed.
