    This was the first paella recipe I ever tried. I felt like Casas was holding my hand, and I loved the results. I note that, since the cost of crab has skyrocketed, I sometimes now make this with canned crab, "fish stick" from the local Japanese market, and a bunch of sea scallops. Not as intensely delicious, but still really good
