    Best paella I've cooked to date. Most paella recipes found online are 1) not authentic, and 2) lack in the details of method needed to achieve soccarat (i.e. nirvana). The instructions in this book and in this particularly recipe are spot on, as are the flavors. Highly recommended to cook the recipe as written, and on a grill.
