    Good, light dinner. Easy to prepare and everything except assembly can be done ahead. It was tasty, but not write home about. Photo in the cookbook is definitely fake. Actual dressing comes out looking similar to Thai peanut sauce, while cookbook photo shows thick, dark, dabs of what looks like hoisin. I forgot to reserve cooking broth to thin the dressing (I made a batch of dal with the broth), so I thinned it with a couple tablespoons of Shaoxing which worked well. I used J Kenji Lopez-Alt's poaching technique from The Wok for the chicken as opposed to the instructions in the recipe, but they are fairly similar.
