Coconut Southern Comfort layer cake from Bon Appétit Magazine, February 2012 (page 81) by Martha Hall Foose

Where’s the full recipe - why can I only see the ingredients?

Always check the publication for a full list of ingredients. An Eat Your Books index lists the main ingredients and does not include 'store-cupboard ingredients' (salt, pepper, oil, flour, etc.) - unless called for in significant quantity.

Coconut-lovers' dream cake. Didn't split the layers, 4 levels of frosting is quite enough, thank you. Easily serves 20 people.

The cake is wonderful & rich. The only reason I didn't rate it 5 stars is that I thought it is too difficult to cut the layers in half, they don't rise enough & they would disintegrate. In the reviews on epicurious, someone suggested making the layers in 8" pans if you want to cut them into 8 layers which makes better sense. I made it with the 4 layers which was perfect. I substituted Jack Daniels for the Southern Comfort which was divine. Brought it to a xmas wine tasting dinner and everyone loved it and thought it was the best cake they've ever eaten! Use very fresh dried coconut chips for the outside. Mine were from my local healthfood grocery and they tasted fresh. Would make again!
