    I made this without the ham, and with a fried egg on top instead of scrambled in. Admittedly NOT piperade, and NOT as the Roux brothers described the recipe. But it was spectacularly good. Note that it's really important to choose very flavourful tomatoes. Or, out of season, very VERY good canned tomatoes.
